Lobster Sous Vide

Ingredient:

Brolos lobster, cucumber, vanilla butter, fennel sauce, salt, sorbet, fennel, edible flowers

 

Recipe:

  1. Boil the lobster until cooked and de-shell
  2. Season the lobster meat with vanilla butter and slow cook it in vacuum package under 80 degree centigrade
  3. Shredded the cucumber and mix with fennel sauce
  4. Chop the lobster meat into dice and sprinkle with little salt
  5. Place the lobster meat with with cucumber slices
  6. Dressing with a spoon of sorbet, fennel and edible flowers
