Ingredient:
Brolos lobster, cucumber, vanilla butter, fennel sauce, salt, sorbet, fennel, edible flowers
Recipe:
- Boil the lobster until cooked and de-shell
- Season the lobster meat with vanilla butter and slow cook it in vacuum package under 80 degree centigrade
- Shredded the cucumber and mix with fennel sauce
- Chop the lobster meat into dice and sprinkle with little salt
- Place the lobster meat with with cucumber slices
- Dressing with a spoon of sorbet, fennel and edible flowers
